ABOUT SYBIL'S OMELETTES
Sybil’s Omelettes has been a cherished part of the Salem community since 1982, when Dr. Wolfram F. Gottschalk transformed a former steakhouse into a haven for omelette lovers. Originally named Omelettes Unlimited, the restaurant was later renamed Sybil’s Omelettes in 1986.
While Dr. Gottschalk was a renowned plastic surgeon, his entrepreneurial spirit and love for good food led him to create a welcoming, family-friendly dining experience centered around one of the most versatile ingredients—eggs. Following his passing in 2011, ownership passed to his wife, Dorothee, who, with the support of an amazing and dedicated staff, continues to uphold the warm and inviting atmosphere that has made Sybil’s a local institution.
For over four decades, Sybil’s has been more than just a restaurant—it has been a place where employees and customers alike feel like family. The Gottschalks’ four children worked in various roles throughout their youth, and today, many of the staff have been with Sybil’s for years, creating a unique sense of community. A commitment to great food and a drive towards creating a wonderful dining experience ensures that Sybil’s remains true to its roots, offering exceptional service and a comforting menu of over 110 omelette varieties.
Beyond serving delicious meals, Sybil’s is committed to giving back, supporting local charities, food drives, and disaster relief efforts. As Dorothee proudly reflects on the generations of families who continue to return, Sybil’s remains a place where guests truly “come as strangers and leave as friends.”

What she’s learned working at Sybil’s: She has learned that a smile and being kind go a long way. Through genuine kindness, great food, and the most amazing employees, Sybil’s has become an environment where friends and families gather and memories are made.
